Delicious Hedgehog
Who doesn’t love a yummy, moist piece of hedgehog? This recipe was shared with me over 30 years ago by the lovely mother of one of my primary school students when I was teaching. So, thanks Judy. We still love it!
Ingredients:
¼ lb (125g) Butter
¼ lb (125g) Sugar
1 Tbsp Cocoa
½ lb (230g) Marie Biscuits, crushed
1 Egg, beaten
½ cup Sultanas
*100g chocolate, melted + a tsp of copha - for the top of the slice. This recipe originally came without the chocolate, but add it if you like.
½ cup Coconut + extra for the top, or hundreds and thousands, or anything that takes your fancy!
Method:
1. Melt butter, sugar and cocoa in a saucepan large enough to hold all the ingredients, stirring well.
2. In a basin, mix together Marie biscuits, beaten egg, sultanas, and coconut.
3. Add the basin mixed ingredients to the butter mix in the saucepan. Mix well.
4. Cook in the saucepan for 1 minute, stirring constantly.
5. Press into a baking paper lined slice tin.
6. *Melt chocolate and copha and pour on top.
7. Sprinkle with extra coconut.
8. Set in the fridge. Enjoy!
