My sister’s Homemade Shortbread

To me, love is shown when you share a recipe, and sometimes a favourite one comes your way, and you just can’t go past it. And thanks to my gorgeous sister, that’s exactly what this recipe is for me.

INGREDIENTS:

250 g Butter

1 cup Icing Sugar

1 1/2 cups Plain Flour

1 cup Cornflour

Pinch of Salt

METHOD:

1.      Preheat oven to 160 degrees C, Fan-forced.

2. Beat the butter and the icing sugar.

3.     Gradually add combined flour, cornflour and salt.

4.      Knead and split into halves, wrapping in gladwrap and refrigerate for 1/2 an hour.

5.     Roll on a piece of baking paper, sprinkling flour on the bottom and the top so it doesn’t stick. I also put a little flour onto my rolling pin regularly.

6.     Bake for 10 to 15 minutes, or until lightly golden.

7. Cool completely.

8. Ice however you choose. I like to use fondant icing, and a decorative rolling pin.

* Tip: Warm the fondant icing in the microwave for 10 - 15 seconds to make it more pliable. And use icing sugar on the bottom and the top, again putting some on the rolling pin so it doesn’t stick.
