Creamy Carbonara - My Version!
If this Carbonara looks far from traditional to you, then you’d be absolutely right because it’s my own version I made up many years ago. And it’s a family favourite I’d totally forgotten about until my bestie mentioned she wanted to make Carbonara and I told her about my “let’s wing it” version. And as always, it’s so easy! See what you think. My recipe caters for 2-3 people.
INGREDIENTS:
1 small onion (or large if you are making for a family of 4 or more)
1/2 cup Thickened Cream (I use Zimyl lactose free)
2-4 Rashes Bacon, chopped
2 large chicken thighs or breasts, chopped in 1 cm cubes
1 teaspoon garlic
Pasta of your choice
Chives
Tasty cheese, grated
METHOD:
1. Chop onion finely and cook in frypan until it is translucent. Remove.
2. Chop bacon into small pieces and cook. Remove.
3. Chop chicken into 1 cm cubes and cook. Then add cooked onion and bacon. Stir.
4. Add cream and simmer to condense flavours and reduce cream.
6. Boil water, add good pinch of salt and add pasta. Cook until ready.
7. Add a tablespoon of the pasta water to the meat. Drain pasta and immediately add to Carbonara sauce mix. Stir, place in bowls, add cheese and chives, and dive in! It’s yummy! xo
